Gourmet Spinach and Artichoke Grilled Cheese Sandwich

2 oz’s of cream cheese
1/4 C Sour Cream
1/4 C of Fresh Mozzarella Cheese
1/2 tsp of Garlic Powder
1/2 tsp of Seasoning Salt
1 Tbls Olive Oil
1 Garlic Clove, minced
4 C of Fresh Spinach
1/2 C of Chopped Artichokes
Salt and Pepper, to taste
Butter (to coat bread for grilling)
A sprinkle of Red Pepper Flakes
4 Slices of Hearty Whole Grain Loaf Bread (or any bread you prefer)

In a small mixing bowl, combine cream cheese, sour cream, mozzarella cheese, garlic powder, and seasoning salt. Beat with an electric mixer until creamy. Set aside.
Next, saute 1 clove of garlic in 1 Tbls of olive oil for 1 minute in a skillet over medium heat. Add spinach, salt and pepper to taste, and cook until wilted…About 2 minutes. Next add the artichokes and saute for another minute.
Next, generously butter 1 side only of each slice of bread. On the opposite sides of the bread, spread the cream cheese mixture. Next, divide the spinach and artichoke mixture and spread it over the cream cheese mixture of 2 slices. Sprinkle red pepper flakes on top. Put the remaining 2 pieces of bread over the spinach with the butter side up. Over very low heat, preheat a skillet and grill the sandwiches 1 at a time. Grill each side for about 3-5 minutes until lightly browned.

Makes 2 sandwiches
